  • 10 lasagna noodles (cooked until al dente)
  • 15 ounces ricotta cheese
  • 1 cup mozzarella cheese (shredded)
  • 4 eggs (beaten, divided)
  • 2 cloves garlic (minced)
  • cup all-purpose flour
  • 2 cups Italian breadcrumbs
  • Vegetable oil (for frying)

Instructions

  1. Cook lasagna noodles according to package directions until al dente. Grease a baking sheet.
  2. Place cooked noodles flat on the prepared pan.
  3. In a mixing bowl, combine ricotta cheese, mozzarella, 2 beaten eggs, garlic, and season with salt and pepper.
  4. Spread the filling over each noodle and fold them into squares. Freeze for 30-45 minutes.
  5. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  6. Heat vegetable oil in a deep skillet to about 350F.
  7. Dip each noodle square in flour, then egg, and coat with breadcrumbs.
  8. Fry in batches until golden brown, about 2-3 minutes per side.
