  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • Juice of 1 lemon
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the chicken breasts into strips about one inch wide and season with salt and pepper.
  3. In a bowl, combine olive oil, oregano, lemon juice, salt, and pepper. Add chicken strips and toss to coat; marinate for at least 10 minutes.
  4. In another bowl, mix panko breadcrumbs with Parmesan cheese.
  5. Dredge each chicken strip in the breadcrumb mixture until fully coated and place on the prepared baking sheet.
  6. Bake for 15-20 minutes until golden brown and cooked through (internal temperature should reach at least 165°F or 74°C).
