  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk together flour, salt, and baking powder. Gradually add to the wet mixture until combined.
  5. Using a cookie scooper, shape dough into balls and place on the prepared baking sheet. Gently flatten each ball and create space in the center for filling.
  6. Bake for 8–9 minutes or until lightly golden. Allow cooling before serving.
