  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 packet taco seasoning
  • 1 can Rotel (10 oz), strained
  • Juice of 1 lime
  • Flour or corn tortillas for serving

Instructions

  1. Spray a 6 or 7-quart crockpot with non-stick spray.
  2. Place chicken in the bottom of the crockpot and sprinkle with taco seasoning.
  3. Top with Rotel and lime juice.
  4. Cover and cook on high for 3-4 hours or low for 7-8 hours until chicken is easily shredded.
  5. Drain excess liquid, shred chicken with two forks, and serve in warmed tortillas with your favorite toppings.
