  • 8 oz cream cheese (cubed)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 8 oz small pasta (e.g., elbow macaroni)

Instructions

  1. Place chicken breasts in the bottom of a slow cooker. Add the chicken broth, taco seasoning, diced tomatoes, corn, and black beans. Stir gently.
  2. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is cooked through.
  3. Shred the chicken in the slow cooker and stir in cream cheese until melted.
  4. Add uncooked pasta; ensure it’s mostly submerged in liquid. Cook on HIGH for another 20-30 minutes until pasta is tender.
  5. Stir in shredded cheese until melted and smooth. Let sit for 5-10 minutes before serving.
