  • 2 slices bacon
  • 1 large yellow onion
  • 1 cup carrots
  • cup celery
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tsp garlic
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta
  • 1 cup Parmesan Reggiano

Instructions

  1. Cook bacon in a skillet until crispy. Drain and add to the slow cooker.
  2. Add diced onion, carrots, celery, garlic, salt, pepper, thyme, basil, parsley, and tomato paste to the slow cooker.
  3. Stir in crushed tomatoes, cannellini beans, chicken broth, and water. Mix well.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours. Add uncooked ditalini pasta 30 minutes before serving.
  5. Ladle into bowls and top with freshly grated Parmesan cheese.
