  • 3 cups shredded rotisserie chicken
  • 2 jars (15 oz each) alfredo sauce
  • 1.5 cups shredded mozzarella cheese
  • 12 oz box of oven-ready lasagna noodles
  • 2.5 cups chopped baby spinach
  • 32 oz ricotta cheese
  • 1.5 cups shredded parmesan cheese
  • 3 eggs

Instructions

  1. Spray a 6-quart crock pot with nonstick cooking spray.
  2. In a large bowl, mix mozzarella, parmesan, ricotta, garlic, salt, pepper, Italian seasoning, and eggs until combined.
  3. Spread ¾ cup alfredo sauce at the bottom of the crock pot; layer with 5 noodles cut to fit.
  4. Pour half of the remaining alfredo sauce over noodles; add half of the cheese mixture, then half of the chicken and spinach.
  5. Repeat layering with another set of noodles, sauce, cheese mixture, chicken, and spinach.
  6. Finish with remaining noodles topped with reserved alfredo sauce and extra spinach.
  7. Cover and cook on low for about 4 hours until heated through.
  8. In the last few minutes, sprinkle mozzarella on top; cover until melted.
