  • 3 lb beef chuck roast
  • 5 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 cups beef broth
  • 0.25 cup apple cider vinegar
  • 1 onion
  • 6 garlic cloves
  • 2 tbsp cumin
  • 2 tsp oregano
  • 1 tsp cloves
  • 0.5 tsp cinnamon
  • 2 bay leaves
  • Salt and pepper to taste
  • Corn tortillas
  • Oil for frying
  • 0.5 cup diced onion
  • 0.25 cup chopped cilantro
  • 1 lime

Instructions

  1. Prepare the chiles by removing stems and seeds; rinse under cold water.
  2. Soak the cleaned chiles in hot water for about 15 minutes until softened.
  3. Blend the soaked chiles with beef broth, vinegar, onion, garlic, and spices until smooth.
  4. Place the beef chuck roast in the slow cooker and pour the chile mixture over it. Add bay leaves and cook on low for 8 hours until tender.
  5. Once cooked, shred the beef with two forks and discard excess fat or bay leaves.
  6. Fry corn tortillas in oil until crispy but pliable; fill with shredded beef and top with diced onion and cilantro.
