  • 12 tablespoons olive oil (or avocado oil)
  • teaspoon sea salt
  • teaspoon garlic powder
  • teaspoon black pepper
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 250F (120C).
  2. Wash and slice zucchinis into 1/8-inch rounds using a mandoline slicer.
  3. Lay slices on paper towels, sprinkle with sea salt, and let sit for 10 minutes to remove moisture. Pat dry.
  4. Toss zucchini slices in olive oil and seasonings until evenly coated.
  5. Arrange slices in a single layer on a parchment-lined baking sheet and bake for 1.5 to 2 hours, flipping halfway through.
  6. Let cool before serving.
