  • 12 cups cooked shredded chicken
  • 1 can black beans
  • 1/2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic salt or garlic powder
  • 1 green onion (finely sliced)
  • 1/2 red or green bell pepper (diced)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime (about a tablespoon)
  • 2 cups shredded cheese (Monterey jack and sharp cheddar mix)
  • Sour cream (optional)
  • 6 burrito-sized flour tortillas
  • Nonstick cooking spray

Instructions

  1. In a large bowl, combine rice, chili powder, cumin, and garlic salt.
  2. Add shredded chicken, black beans, green onions, bell pepper, cilantro, and lime juice; mix well.
  3. Sprinkle cheese onto each tortilla and add the filling down the center.
  4. Fold the tortillas over the filling and press lightly to seal.
  5. Heat a non-stick skillet over medium heat; cook wraps seam-side down for 2-4 minutes until golden brown.
  6. Flip wraps and spray with cooking spray; cook another 2-4 minutes until crisp.
