  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 425F (220C) and line a baking sheet with parchment paper.
  2. Boil carrot rounds in salted water for 1012 minutes until fork-tender; drain and cool slightly.
  3. Place boiled carrots on the baking sheet and gently smash each round using the bottom of a glass.
  4. Drizzle with olive oil, season with garlic powder, smoked paprika, salt, and black pepper; sprinkle Parmesan over each carrot.
