Ingredients

Scale
  • 1 medium eggplant (cut into fry shapes)
  • 1.5 cups gluten-free panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs (lightly whisked)
  • Salt and pepper
  • Olive oil cooking spray
  • Optional: 1 cup marinara sauce for dipping

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Cut the eggplant into planks about 4 inches long and 1 inch wide, then slice into fry shapes.
  3. In one shallow bowl, combine the whisked eggs with a pinch of salt and pepper. In another bowl, mix the gluten-free panko breadcrumbs with grated parmesan.
  4. Dip each eggplant fry into the egg mixture, allowing excess to drip off, then coat with the breadcrumb mixture.
  5. Arrange the breaded fries in a single layer on the prepared baking sheet and lightly spray with olive oil.
  6. Bake for 20-25 minutes, flipping halfway through until golden brown and crispy.
  7. Serve warm, optionally with marinara sauce.
