  • 4 cups organic chicken stock
  • 1 cups organic heavy cream
  • 2 cups chopped kale
  • Sea salt and black pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then cook until golden brown on both sides (about 6-8 minutes per side). Remove and set aside.
  2. In the same pot, melt butter and saut garlic and thyme until fragrant (1-2 minutes).
  3. Stir in flour while mixing continuously; gradually add chicken stock until smooth. Bring to a simmer.
  4. Add gnocchi, sliced lemon, and cooked chicken; cook according to gnocchi package instructions (3-5 minutes).
  5. Lower heat; stir in heavy cream and lemon juice until heated through but do not boil.
  6. Mix in chopped kale until wilted; finish with grated Parmesan cheese.
