  • 4 salmon fillets (4 ounces each)
  • 6 cloves garlic, minced
  • 18 ounces cherry tomatoes
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, shredded
  • 34 ounces spinach, chopped
  • Fresh basil for garnish

Instructions

  1. Heat a skillet over medium-high heat and add olive oil.
  2. Season salmon fillets with salt and pepper; sear in the hot skillet for 3 minutes per side. Remove and keep warm.
  3. In the same skillet, melt butter and saut minced garlic until fragrant.
  4. Add halved cherry tomatoes; cook briefly until they begin to split.
  5. Pour in heavy cream, season with salt, basil, and cayenne; simmer for 24 minutes.
  6. Stir in parmesan cheese and chopped spinach until combined and slightly thickened.
  7. Return salmon to the pan to warm through; serve garnished with fresh basil.
