  • 2 tablespoons butter
  • 34 cloves garlic (minced)
  • 1 cup heavy cream
  • 2 medium tomatoes (chopped)
  • cup freshly grated parmesan cheese
  • cup fresh basil (torn)
  • Salt & pepper (to taste)

Instructions

  1. Boil salted water in a large pot and cook the pasta al dente according to package directions.
  2. In a skillet over medium-high heat, melt butter. Add flour to create a roux, cooking for about 1 minute.
  3. Stir in minced garlic and saut briefly. Add apple vinegar or broth and reduce by half.
  4. Whisk in cream, Dijon mustard (if using), and Italian seasoning until smooth.
  5. Incorporate chopped tomatoes and simmer for 5 minutes until slightly thickened.
  6. Remove from heat and stir in parmesan cheese and torn basil.
  7. Drain the pasta and toss it with the sauce until evenly coated. Serve hot with extra parmesan if desired.
