  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded pepper jack cheese

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and cook the diced chicken until browned and cooked through (about 5–7 minutes). Remove from the skillet and set aside.
  3. In the same skillet, brown the sliced sausage for about 3–4 minutes. Remove from the skillet and keep with the chicken.
  4. Sauté onion and bell pepper in the skillet until softened (around 3–4 minutes). Add garlic and cook for another minute.
  5. Stir in Cajun seasoning, then pour in heavy cream; bring to a simmer before mixing in shredded cheese until melted and smooth.
  6. Return chicken and sausage to the skillet, add cooked penne pasta, and toss to coat everything with sauce.
  7. Season with salt and pepper to taste and serve hot.
