  • 2 pounds zucchini (sliced)
  • cup heavy cream
  • cup sour cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • 3 cloves garlic (minced)
  • 2 tablespoons butter
  • Italian seasoning
  • onion powder
  • salt
  • black pepper

Instructions

  1. Preheat your oven to 425?F.
  2. Butter a baking dish and set aside.
  3. Salt the zucchini slices and let them sit for 15 minutes to draw out moisture.
  4. Wipe excess salt from the zucchini after resting.
  5. Arrange the zucchini slices in the baking dish.
  6. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  7. Saut minced garlic in melted butter over medium heat for about 20 seconds.
  8. Pour the cream mixture into the saucepan with garlic and stir until bubbling.
  9. Add half of the mozzarella cheese until melted.
  10. Pour the creamy mixture over the zucchini and top with remaining cheeses.
  11. Bake for 18 to 22 minutes until golden brown.
