  • 2 boneless chicken breasts
  • 200g gnocchi (store-bought or homemade)
  • 150ml heavy cream
  • 1 cup baby potatoes
  • 1 cup broccoli florets
  • 1 cup mushrooms
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tsp dried or fresh chopped parsley
  • Salt & black pepper, to taste
  • 1/2 tsp paprika
  • Grated Parmesan (optional)

Instructions

  1. Preheat the oven to 200C (400F). Toss halved baby potatoes with olive oil, salt, and pepper; roast for about 25 minutes until golden.
  2. Season chicken breasts with paprika, salt, and pepper; sear in a skillet with olive oil for 5-6 minutes per side until cooked through. Let rest before slicing.
  3. In the same skillet, sauté mushrooms until browned. Set aside.
  4. Boil gnocchi according to package instructions (about 2-3 minutes) and drain.
  5. In a saucepan over medium heat, melt butter and sauté minced garlic for 30 seconds. Add heavy cream and chopped parsley; simmer for 3-4 minutes until thickened. Season as desired.
  6. Steam broccoli for about 4-5 minutes until bright green.
  7. Assemble the bowl by layering gnocchi with sauce, topped with sliced chicken, roasted potatoes, sautéed mushrooms, and steamed broccoli.
