  • 2 chicken breasts (9oz/250g each)
  • 1/4 cup (40g) flour
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 9oz (250g) baby button mushrooms, sliced
  • 3/4 cup (180ml) heavy cream
  • 3/4 cup (180ml) chicken stock
  • 1 oz (30g) freshly grated Parmesan cheese
  • 2 cloves garlic, diced
  • Fresh parsley and chives for garnish

Instructions

  1. Slice each chicken breast horizontally to create four thinner pieces.
  2. In a shallow dish, mix flour, salt, garlic powder, and pepper. Dredge the chicken breasts in the mixture.
  3. Heat olive oil and butter in a large pan over medium-high heat. Cook the chicken for about 5 minutes on each side until golden brown and cooked through. Remove from the pan.
  4. In the same pan, melt another tablespoon of butter and sauté mushrooms until golden. Add garlic and cook for an additional minute.
  5. Pour in chicken stock and cream; stir well. Add herbs and simmer for five minutes until slightly thickened.
  6. Incorporate Parmesan cheese until melted; season with lemon juice, salt, and pepper.
  7. Return chicken to the sauce, allowing it to absorb flavors before serving.
