  • 250g large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • Juice of 1/2 lemon
  • 1 tsp dried Italian herbs or parsley
  • Salt and black pepper to taste
  • 1 cup basmati or jasmine rice

Instructions

  1. Rinse the rice under cold water and bring 2 cups of water with a pinch of salt to a boil. Add rice, cover, reduce heat, and simmer for 12-15 minutes.
  2. Heat olive oil and butter in a skillet over medium-high heat. Season shrimp with salt and pepper; cook for 1-2 minutes on each side until pink. Remove from skillet.
  3. In the same pan, sauté minced garlic for 30 seconds until fragrant. Add chicken broth; simmer for about 2 minutes.
  4. Stir in heavy cream, lemon juice, and dried herbs; simmer for another 3-4 minutes until slightly thickened.
  5. Return shrimp to the pan and toss to coat in the sauce; heat through for an additional minute.
  6. Serve immediately with herbed rice.
