  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup heavy cream or half-and-half
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • teaspoon ground cumin
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and minced garlic; saut until the onion is translucent.
  3. Stir in beef broth, diced tomatoes (with juice), corn, black beans, and potatoes.
  4. Season with smoked paprika, chili powder, ground cumin, salt, and black pepper.
  5. Bring to a boil; reduce heat and let simmer for about 20 minutes until potatoes are tender.
  6. Remove from heat and stir in heavy cream until well combined.
  7. Serve hot topped with shredded cheese and crushed tortilla chips.
