  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 egg
  • ½ cup breadcrumbs
  • ½ onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, combine the ground meat, onion, garlic, breadcrumbs, egg, salt, and pepper until well mixed.
  2. Shape the mixture into small meatballs.
  3. Heat olive oil in a skillet over medium heat; brown the meatballs on all sides and set aside.
  4. In the same skillet, sauté minced garlic and ginger until fragrant.
  5. Whisk in red curry paste followed by coconut milk; stir until smooth.
  6. Add soy sauce and lime juice; let simmer until slightly thickened.
  7. Return meatballs to the skillet and simmer in the sauce for about 10–15 minutes until cooked through.
  8. Garnish with fresh cilantro before serving hot.
