  • 1 small yellow onion (diced)
  • 1 jalapeño pepper (diced)
  • 3 cloves garlic (minced)
  • 15 oz can corn (drained)
  • 10 oz can Rotel diced tomatoes with green chilies (undrained)
  • 15 oz can black beans (drained and rinsed)
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts (or 2 cups shredded chicken)
  • 1½ cups cheddar cheese (shredded)
  • ⅓ cup cream cheese (softened)

Instructions

  1. In a large pot, heat butter over medium heat. Add onions and jalapeño; sauté for about 5 minutes until softened. Stir in garlic and cook for another minute.
  2. Add corn, Rotel tomatoes, black beans, chicken broth, and chicken breasts. Season with taco seasoning; mix well.
  3. Bring to a gentle boil, then reduce heat to simmer for about 20-25 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot, shred it with two forks, and return it to the soup.
  5. Lower the heat and stir in cheddar cheese and cream cheese until melted and creamy.
  6. Adjust seasoning as needed before serving hot with your favorite toppings.
