  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 generous cups uncooked egg noodles
  • Salt & pepper (to taste)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. In a large soup pot, saut celery, carrots, and onion in olive oil and butter over medium-high heat for about 57 minutes until softened.
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add flour to the pot, mixing well for about one minute.
  4. Gradually pour in chicken broth while stirring; add raw chicken breasts, Italian seasoning, and heavy cream. Bring to a slight boil.
  5. Reduce heat to simmer for 10 minutes.
  6. Stir in egg noodles; cover with lid slightly ajar and cook for another 810 minutes, stirring halfway through.
  7. Remove cooked chicken, chop into bite-sized pieces, return to soup, season with salt and pepper, and stir in parsley before serving.
