  • 23 tablespoons olive oil
  • 2 cups cooked rice or quinoa

  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or dill, chopped
  • 1/4 cup Kalamata olives (optional)

Instructions
