  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon Cajun seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add diced chicken seasoned with Cajun seasoning; cook until browned (about 5–7 minutes). Set aside.
  2. In the same skillet, add remaining butter along with onion and bell pepper. Sauté for about 4 minutes until softened. Stir in garlic; cook for an additional minute.
  3. Add orzo and chicken broth; bring to a boil. Cover and simmer for 10–12 minutes until orzo is tender.
  4. Stir in heavy cream and Parmesan cheese until well combined. Return cooked chicken to the skillet and mix until heated through.
  5. Serve hot, garnished with fresh herbs if desired.
