  • bunch cilantro
  • 5 garlic cloves
  • onion, sliced
  • red onion, sliced
  • 3 carrots, chopped
  • lbs small potato medley, chopped
  • 30 oz coconut milk
  • 2 cups vegetable broth
  • Fresh ginger
  • Lemongrass

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large pot, heat canola oil over medium heat. Saut onions and garlic for about 5 minutes until softened.
  3. Add carrots, potatoes, ginger, lemongrass, and Thai green chili; cook for another 5-7 minutes.
  4. Stir in the spices: black pepper, coriander seeds, cumin seeds, salt, sugar, lime zest, and juice.
  5. Pour in vegetable broth and coconut milk; bring to a gentle boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in quartered baby bok choy just before serving. Garnish with diced chives.
