  • 1/3 cup sugar
  • 2 Tbsp water
  • 8 oz cream cheese
  • 1 Tbsp vanilla paste
  • 8 oz Cool Whip Extra Creamy Whipped Topping
  • 2 cups gingersnap crumbs
  • 5 Tbsp melted butter

Instructions

  1. Butter a 10-inch pie plate.
  2. In a saucepan, combine cranberries, sugar, and water; boil until thickened (about 15 minutes). Blend until smooth and chill.
  3. Mix gingersnap crumbs and melted butter; press into the pie plate. Refrigerate.
  4. Blend chilled cranberry puree with cream cheese and vanilla; fold in Cool Whip until smooth.
  5. Pour filling into the crust and refrigerate for several hours or overnight to set.
