  • 225g unsalted butter
  • 140g dark chocolate
  • 5 eggs
  • 180g brown sugar
  • 180g granulated sugar
  • 100g plain flour
  • 50g cocoa powder
  • 1/4 teaspoon salt
  • 480g granulated sugar (for topping)
  • 150g unsalted butter (for topping)
  • 300ml double cream (for topping)
  • 220g cornflakes

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 9×12 inch baking tin with parchment paper.
  2. Melt 225g unsalted butter and 140g dark chocolate in a saucepan over low heat, stirring until smooth.
  3. In a large bowl, whisk together the melted mixture, eggs, 180g brown sugar, and 180g granulated sugar until combined.
  4. In another bowl, mix together the plain flour, cocoa powder, and salt before gradually folding it into the wet mixture until just combined.
  5. Pour the batter into the prepared tin and bake for 25–30 minutes until a toothpick comes out with moist crumbs.
  6. For the topping: melt the remaining butter and mix with warm double cream and sugar before gently folding in cornflakes.
  7. Spread the cornflake mixture over the baked brownies and return to the oven for an additional 10 minutes.
