  • 3 lbs Russet or Idaho potatoes
  • 6 tbsp butter
  • 1/2 cup milk
  • 1/4 cup reserved cooking water
  • 1/2 lb bacon
  • 14 oz cabbage
  • 2 large leeks
  • Salt and black pepper to taste
  • 1/3 cup diced scallions for garnish

Instructions

  1. Peel and quarter the potatoes. Boil in salted water until tender, about 20 minutes.
  2. In a frying pan, cook bacon until crispy, then chop and reserve some grease.
  3. Saut leeks in the reserved grease until tender, add chopped cabbage, season, and cook until wilted.
  4. Drain the potatoes and mash with butter, milk, and cooking water until smooth. Stir in cabbage mixture and bacon.
  5. Adjust seasoning if necessary, then serve garnished with scallions.
