  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar, packed
  • 2 tsp. cinnamon

  • 5 Tbsp. softened butter, unsalted
  • 1 1/4 cup all purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, and salt. Work in cold butter until clumps form.
  2. Preheat your oven to 400F (200C) and line baking sheets with parchment paper.
  3. In a bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cubed butter with sugars until smooth in a stand mixer. Add eggs and vanilla; mix well.
  5. Gradually incorporate dry ingredients into the wet mixture until just combined.
  6. Scoop dough onto baking sheets and create indents for filling.
  7. Spoon streusel into each indent and bake for 811 minutes until golden.
