  • 1 cup full-fat coconut milk
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1/2 cup full-fat coconut milk
  • 1/2 teaspoon salt
  • Zest of 1 lime
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Marinate the chicken: In a mixing bowl, combine coconut milk, lime juice, lime zest, garlic, soy sauce, honey, cumin, coriander, salt, and pepper. Add the chicken to a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes.
  2. Cook the rice: Rinse basmati rice until clear. In a medium saucepan, combine rice, water, coconut milk, and salt. Bring to a boil; reduce heat to low and cover. Cook for 15-20 minutes until liquid is absorbed.
  3. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Remove chicken from marinade (discard leftover marinade) and cook for 5-7 minutes per side until golden brown and cooked through (165F/74C).
  4. Serve: Plate the rice first; top with chicken and garnish with additional lime zest and cilantro.
