  • 4 salmon fillets
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/4 cup flour
  • 2 eggs
  • 1 cup fresh pineapple, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeo, seeded and minced
  • 2 tablespoons cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 375F (190C).
  2. In a bowl, mix shredded coconut and breadcrumbs. In another bowl, whisk eggs.
  3. Dredge salmon fillets in flour, dip into egg mixture, then coat with the coconut-breadcrumb mix.
  4. Place coated salmon on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  5. For salsa, combine diced pineapple, red onion, jalapeo, cilantro, and lime juice in a bowl; mix well.
  6. Serve baked salmon topped with pineapple salsa.
