  • teaspoon coconut extract
  • teaspoon salt
  • 6 cups confectioners sugar
  • 2 cups sweetened shredded coconut

Instructions

  1. Preheat your oven to 350F (175C) and grease two 9-inch round cake pans.
  2. In one bowl, whisk together cake flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream softened butter and sugar until light and fluffy. Add egg whites one at a time, followed by vanilla and coconut extracts.
  4. Gradually mix in coconut milk and dry ingredients until just combined; fold in shredded coconut.
  5. Divide batter between pans and bake for about 30 minutes or until a toothpick comes out clean. Cool before transferring to a cooling rack.
  6. For frosting, beat together softened butter and cream cheese until smooth; gradually add confectioners' sugar and extracts.
