  • cup butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1 cup flour
  • teaspoon baking powder
  • 1? cups sweetened coconut (Angel Flake)
  • cup slivered almonds
  • teaspoon vanilla extract
  • 13-ounce jar apricot preserves (or other fruit jam)

Instructions

  1. Preheat oven to 350F. Line a 9 x 13-inch baking pan with non-stick foil.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add egg and mix well.
  4. Whisk together flour and baking powder; gradually add to the mixture.
  5. Stir in coconut, slivered almonds, and vanilla until combined.
  6. Press two-thirds of the dough into the pan, then spread preserves evenly over it.
  7. Crumble remaining dough on top of preserves and sprinkle with extra almonds if desired.
  8. Bake for 30-35 minutes or until golden brown.
  9. Allow to cool completely before cutting into squares.
