  • 3 pounds Yukon Gold potatoes
  • 4 hard-boiled eggs
  • 2 ribs celery (chopped)
  • 1/4 cup red onion (chopped)
  • 2 dill pickles (finely chopped)
  • 1 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 tablespoons yellow mustard
  • Salt and pepper to taste

Instructions

  1. Boil unpeeled potatoes in a large pot of water until fork-tender (10-15 minutes). Drain and let steam for an additional 5-10 minutes.
  2. Peel (if desired) and chop the potatoes into 1/2 inch chunks.
  3. In a bowl, mash the yolks of hard-boiled eggs, then mix with mayonnaise, buttermilk, mustard, pickle juice, salt, and pepper.
  4. Combine warm potatoes with the dressing and add chopped egg whites, celery, onion, and pickles. Stir until well mixed.
  5. Chill in the refrigerator for a few hours before serving.
