  • 34 garden-fresh tomatoes, diced
  • teaspoon salt
  • 2 cloves garlic, minced
  • ? cup fresh basil leaves, torn
  • teaspoon black pepper
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 baguette, sliced diagonally
  • cup balsamic vinegar
  • 3 tablespoons brown sugar

Instructions

  1. In a mixing bowl, combine diced tomatoes with salt and let sit for 20-30 minutes to draw out moisture. Drain excess liquid.
  2. Add minced garlic, torn basil leaves, black pepper, red wine vinegar, and olive oil; stir gently and allow to rest for another 20-30 minutes at room temperature.
  3. Preheat oven to 400F (200C). Brush baguette slices with olive oil and bake on a parchment-lined sheet for about 5 minutes; flip and bake until golden brown (2-3 more minutes).
  4. In a saucepan over medium heat, combine balsamic vinegar and brown sugar; simmer for about 10 minutes until thickened.
  5. Top each toasted baguette slice with the tomato mixture, drizzle with balsamic glaze, and serve immediately.
