  • 5 strips bacon
  • 3 1/2 lbs beef chuck
  • 4 tablespoons unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • 10 oz frozen pearl onions
  • 16 oz cremini mushrooms

Instructions

  1. Preheat your oven to 350F (175C).
  2. In a Dutch oven, render the chopped bacon until browned; set aside.
  3. Sear seasoned beef cubes in the remaining fat until browned; remove from pot.
  4. Saut onions and carrots, then add garlic and tomato paste; sprinkle flour.
  5. Pour in the wine and stock, scraping up browned bits; return beef and bacon with herbs.
  6. Cover and transfer to the oven for about 2.5 hours.
  7. Meanwhile, saut mushrooms and pearl onions until browned; combine before serving.
