  • 1/4 cup packed light brown sugar (for streusel)
  • 1/4 cup granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces (for streusel)

Instructions

  1. Preheat oven to 350F (175C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
  3. In another bowl, mix sugar, oil, eggs, and vanilla until well combined.
  4. Add wet ingredients to dry ingredients; stir until just combined.
  5. Fold in grated zucchini and nuts if using.
  6. Pour batter into the prepared pan.
  7. For the streusel topping, combine flour, brown sugar, granulated sugar, cinnamon, and butter until crumbly; sprinkle over batter.
  8. Bake for 5060 minutes until a skewer inserted comes out clean.
  9. Cool in the pan for ten minutes before transferring to a wire rack.
