  • 1 cup Almond Flour (96g)
  • 2 tbsp Ground Flaxseed (14g)
  • 1/4 cup Vanilla Protein Powder (30g)
  • 1 tsp Cinnamon (5g)
  • 1/4 tsp Nutmeg (1g)
  • 1/4 cup Almond Butter (60g)
  • 2 tbsp Maple Syrup (30ml)
  • 1/4 cup Unsweetened Almond Milk (60ml)
  • 2 tbsp Powdered Sugar (16g)
  • 1 tbsp Cinnamon (5g)
  • 2 tbsp Cream Cheese or Dairy-free Alternative (30g)
  • 3 tbsp Powdered Sugar (24g)
  • 12 tsp Unsweetened Almond Milk (5-10ml)

Instructions

  1. Blend rolled oats into a fine powder. In a large bowl, combine powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg. Mix well until evenly combined.
  2. Add almond butter and maple syrup to the dry ingredients. Stir until crumbly. The mixture should hold together when pressed.
  3. Gradually add almond milk, one tablespoon at a time. Mix until a sticky but firm dough forms. Depending on consistency, adjust with more almond flour or almond milk as needed.
  4. Roll the dough into approximately 1-inch balls. In a separate bowl, mix powdered sugar and cinnamon for coating. Roll each bite in this cinnamon-sugar mixture until fully coated.
  5. Place the coated bites on parchment paper. Refrigerate for at least 30 minutes to firm up before serving.
  6. In a small bowl, whisk together cream cheese, powdered sugar, and almond milk. Start with one teaspoon of almond milk; add more to reach desired glaze consistency.
  7. Drizzle the glaze over chilled bites. Serve immediately or store in the fridge for later enjoyment!
