  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. softened cream cheese
  • 1/2 cup softened unsalted butter
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cold butter and granulated sugar in a stand mixer until fluffy. Add eggs and vanilla extract; mix until combined.
  5. Gradually incorporate dry ingredients into the wet mixture until fully combined.
  6. Shape dough into a rectangle, spread the filling evenly over it, then roll tightly from one edge.
  7. Slice the rolled dough into 10–12 cookies and place on a lined baking sheet.
  8. Bake for 9–11 minutes or until edges are golden brown.
  9. Cool cookies before frosting them with cream cheese frosting.
