  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 tablespoons water
  • 1 tablespoon light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1 cup roasted almonds, chopped
  • 12 ounces white chocolate melting wafers
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Prepare a rimmed baking sheet lined with parchment paper and scatter chopped almonds evenly.
  2. In a heavy-bottomed saucepan, combine butter, granulated sugar, brown sugar, water, corn syrup, and salt over medium heat until melted.
  3. Use a candy thermometer to cook the mixture until it reaches 300F (hard crack stage).
  4. Remove from heat and stir in vanilla extract before pouring over the almonds.
  5. Spread into an even layer and let cool for 30 to 45 minutes.
  6. Melt white chocolate wafers until smooth and spread over cooled toffee.
  7. Mix sugar and cinnamon in a bowl; sprinkle over the chocolate and gently press down.
  8. Allow the topping to set before cutting into pieces.
