  • 1 1/2 cups raw walnuts
  • 1/2 cup shelled pumpkin seeds
  • 6 cups mixed greens
  • 2 cups Frise
  • 12 apples or pears, chopped
  • 2 avocados, sliced
  • 2 cups pomegranate arils
  • 1 cup crumbled blue cheese or feta
  • 1/3 cup honey or maple syrup
  • 1/4 teaspoon chipotle chili powder
  • 1/3 cup extra virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig preserves
  • 2 teaspoons orange zest
  • 2 tablespoons orange juice
  • kosher salt and black pepper
  • chili flakes

Instructions

  1. Preheat the oven to 375F. Line a baking sheet with parchment paper. Toss walnuts and pumpkin seeds with honey/maple syrup, chipotle chili powder, and salt. Bake for 15 minutes until toasted.
  2. In a large salad bowl, add mixed greens and Frise, then mix in chopped apples or pears, avocados, and pomegranate arils.
  3. Sprinkle crumbled cheese and roasted nuts over the salad. Toss gently.
  4. In a glass jar, combine olive oil, vinegar, mustard, honey, fig preserves, orange zest/juice, salt, pepper, and chili flakes. Shake well.
  5. Drizzle dressing over the salad just before serving and toss again.
