  • 1 1/2 cups shredded zucchini

  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a larger bowl, combine eggs, melted butter, canola oil, brown sugar, and vanilla; mix until smooth.
  4. Gradually add dry ingredients to wet ingredients without overmixing.
  5. Fold in shredded zucchini and half of the chocolate chips.
  6. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
