  • 60g unsalted butter
  • 220ml whole milk
  • 1 packet fast-action dried yeast
  • 50g caster sugar
  • 460g strong white bread flour
  • 50g cocoa powder
  • 60g light brown sugar
  • 4 teaspoons ground cinnamon
  • Zest of 1 large orange
  • For frosting: 50g milk chocolate, 75g full-fat cream cheese, 50g icing sugar, juice of 1 large orange

Instructions

  1. Warm the milk until lukewarm and mix with yeast and sugar. Let sit until frothy.
  2. In a stand mixer, combine flour, cocoa, salt, egg, yolk, and butter. Add the yeast mixture and mix until smooth.
  3. Knead on a floured surface for about 5 minutes; let rise in a greased bowl for about an hour.
  4. Mix filling ingredients together. Roll out dough into a rectangle and spread filling across it. Roll tightly into a log and cut into pieces.
  5. Place in a greased tray and let rise again for another hour.
  6. Bake at 180C (350F) for approximately 20 minutes until golden brown.
  7. To make frosting, melt chocolate and mix with cream cheese, icing sugar, and orange juice. Drizzle over warm rolls.
