  • 1/2 cup vanilla protein powder
  • 1/4 cup cashew butter (or alternative nut/seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, 2 tablespoons of milk, honey or maple syrup, and vanilla until smooth.
  3. Combine wet and dry ingredients until fully incorporated.
  4. Fold in mini chocolate chips.
  5. Adjust consistency by adding more milk if needed.
  6. Roll the mixture into 1-inch balls and place on parchment paper.
  7. Chill in the refrigerator for at least 30 minutes.
  8. Melt chocolate chips with coconut oil in intervals until smooth.
  9. Dip each ball in melted chocolate; sprinkle extra mini chocolate chips on top.
  10. Chill again until the chocolate sets.
