  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla extract
  • 5 oz dark chocolate, chopped
  • 1/4 cup + 2 tbsp heavy cream
  • 1/4 cup cherry preserves

Instructions

  1. Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk flour, cocoa powder, baking powder, and salt. In another bowl, beat butter and sugars until creamy; add egg yolks and vanilla until smooth.
  3. Gradually mix dry ingredients into the wet mixture until combined.
  4. Scoop dough onto the baking sheet, press your thumb into each ball to form a well.
  5. Bake for approximately 10 minutes; let cool slightly before transferring to a wire rack.
  6. Prepare ganache by heating heavy cream and pouring over chopped chocolate; stir until smooth. Fill cookie wells with cherry preserves followed by ganache.
