  • 1 pack of ½ duck with pancakes
  • 1 cucumber
  • 1 bunch spring onions
  • 3 carrots
  • 2 Romano peppers (or red bell peppers)
  • 1 bag baby leaves (washed)
  • 1 lb plums
  • 2 tsp honey
  • 1 tbsp Tamari or soy sauce
  • 1 star anise
  • 0.5 tsp Chinese five spice
  • 1 tsp sesame oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Prepare the duck by heating it in a frying pan over medium heat until crispy, about 10–15 minutes.
  2. While the duck cooks, wash and chop the cucumber, spring onions, carrots, and Romano peppers into bite-sized pieces and place them in a mixing bowl.
  3. For the plum dressing, destone and chop plums and add them to a saucepan with honey, Tamari or soy sauce, star anise, Chinese five spice, sesame oil, and balsamic vinegar. Boil gently for 10–15 minutes until soft; remove star anise.
  4. Slice the crispy duck into thin strips and combine it with the chopped vegetables and baby leaves in the mixing bowl. Drizzle plum dressing over the top and toss gently.
  5. Serve immediately to enjoy freshness.
