  • 1 lb boneless chicken thighs
  • 1 medium zucchini
  • 3 cloves garlic
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • Cooking oil
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)

Instructions

  1. Cut chicken into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional vinegar for at least 30 minutes.
  2. Heat cooking oil in a wok over medium-high heat. Sauté smashed garlic until fragrant.
  3. Add marinated chicken to the wok; cook for about 2 minutes until browned.
  4. Remove chicken and stir-fry sliced zucchini for about 5 minutes until tender.
  5. Return chicken to the wok, add oyster sauce and ground black pepper (if desired), then stir-fry together for another 2-3 minutes until fully cooked.
