  • 4 cloves garlic (chopped)
  • 2 pounds skinless chicken thighs
  • 16-ounce can tomato sauce
  • 7-ounce can chipotles in adobo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon Mexican oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chopped onions and jalapenos; sauté for 5 minutes until softened.
  2. Stir in chopped garlic and cook for another minute.
  3. Season chicken thighs with salt and pepper, then brown them for 2 minutes on each side.
  4. Blend tomato sauce and chipotles in a food processor, then pour over the chicken in the pan.
  5. Add chili powder, oregano, salt, and pepper; bring to a boil then reduce heat to simmer for 30 minutes.
  6. Shred the chicken using two forks and return it to the pan; simmer for an additional 5 minutes.
